1 Tablespoon coconut oil
¼ onion, chopped
½ bell pepper, chopped
1 teaspoon chili powder
¼ teaspoon black pepper
½ cup black beans
¼ cup guacamole
¼ cup salsa
In a bowl, beat the eggs, then stir in onion, bell pepper, chili powder and pepper.
In a medium skillet heat oil over medium heat, pour in egg mixture and cook about 3 minutes, until partially set.
Flip with spatula and continue cooking 2 to 3 minutes.
Top with black beans, salsa, and guacamole before serving.
Makes a total of one serving.
Takes about 20 minutes to prepare.
