Paleo Pot Roast

Ingredients:
2–3 pounds boneless chuck roast
2 parsnips, chopped
3–4 carrots, chopped
3 stalks celery, chopped
1 red onion, chopped
1½ teaspoon thyme
1½ teaspoon garlic
1–2 teaspoons salt
1–2 teaspoons pepper
2 bay leaves
2 cups beef bone broth
1–2 cups water
Directions:
Add everything to a large crock pot and cook on low for 8 hours.
Serve as is or, add half of the vegetables from the pot roast and some of the liquid to a blender or food processor and puree the mixture, creating a velvety base for the roast.
