Paleo Pot Roast



Ingredients:

  • 2–3 pounds boneless chuck roast

  • 2 parsnips, chopped

  • 3–4 carrots, chopped

  • 3 stalks celery, chopped

  • 1 red onion, chopped

  • 1½ teaspoon thyme

  • 1½ teaspoon garlic

  • 1–2 teaspoons salt

  • 1–2 teaspoons pepper

  • 2 bay leaves

  • 2 cups beef bone broth

  • 1–2 cups water


Directions:

  1. Add everything to a large crock pot and cook on low for 8 hours.

  2. Serve as is or, add half of the vegetables from the pot roast and some of the liquid to a blender or food processor and puree the mixture, creating a velvety base for the roast.

The Breakdown:

Makes a total of 6-8 servings.

Takes about 8-9 hours to prepare.
