It is estimated that Vinegar has been around since 5000 B.C.   Originally used as a food preservative it's health benefits and medicinal uses were soon to be discovered.  Hippocrates, the father of medicine, who said ,"Let food be thy medicine and medicine be thy food," used vinegar to heal wounds.  Practitioners soon started using vinegar to treat a variety of ailments.

Fast forward to today, vinegar and specifically apple cider vinegar is being used as a staple in many kitchens around the world.  So in this post I'm going to go over many of the benefits and uses of apple cider vinegar (ACV).

Vinegar is not only useful for cooking, it's useful for health purposes, cleaning, garden care, hygiene, and much more. In fact, a jug of vinegar is easily one of the most economical and versatile remedies around.

Traditionally, vinegar is made through a long, slow fermentation process, leaving it rich in bioactive components like acetic acid, gallic acid, catechin, epicatechin, caffeic acid, and more, giving it potent antioxidant, antimicrobial, and many other beneficial properties.

But what separates apple cider vinegar from just regular vinegar is the "Mother".  The "Mother" of vinegar, a cobweb-like amino acid-based substance found in unprocessed, unfiltered vinegar, indicates your vinegar is of the best quality. Most manufacturers pasteurize and filter their vinegar to prevent the mother from forming, but the "murky" kind is best, especially if you're planning to consume it. 

This cobweb-like substance that forms the "Mother" is mainly acetic acid. Acetic acid has the ability to kill dangerous “bad” bacteria and at the same time, foster the growth of beneficial “good” bacteria. Because acetic acid kills unwanted bacteria when it comes into contact with it, it essentially acts as a natural antibiotic.
